20 Jan Sambal Stingray
The stingray is cut into steak sizes pieces, marinated in a sambal sauce made from chilies, shallots, cane sugar, some tamarind, and calamansi juice. They then wrapped the stingray in a banana leaf and grilled over. It is grilled and kind of baked in the sambal and its own juices all at the same time.
It’s truly something you have to eat in Singapore, with the unique cooking process, you can taste the essence of the banana leaf embedded in the stingray from the grilling.
