Long-grain bastami rice is used, and while the flavor of ghee is resent, it’s not overwhelming. There is fried onion, raisin and coriander leaves in the rice added more flavor and texture, and the addition of preserved lemon achar results in an overall intense, smoky mouthful.
Have a taste of the thick and earthy masala gravy in this dish. Taste the rice and you’ll notice that the chef added a scattering of aromatic spices and herbs like garlic, ginger, onions, coriander, and mint.
